I love my slow cooker, I’ve been trying to find lots of different recipes to try out as I seem to always cook the same things in it. I decided to look for some more ideas to try a few out.
The good thing with a slow cooker is, its just so easy. Literally chuck everything in in the morning and by the time you’re ready for your dinner, its cooked and ready for you to dish up. My slow cooker is quite small one, I’ve got this one, its perfect size for what we need and there is always plenty left over to freeze for another day.
I did some searching online and found a BBQ pulled chicken recipe which looked really tasty. I decided to give a go and adapted the recipe slightly to what I already had in the cupboard! It worked and was really tasty. So if you’re looking for some inspiration, give this a try.

I always brown the chicken off first, I don’t think you need to but I always worry about chicken being cooked properly so I like to brown them off first to be safe!
Once you have done this, put them in the slow cooker and add 2-3 tablespoons of honey, a few squirts of BBQ sauce and a generous sprinkle of smoked paprika. I don’t use exact measurements! I just put enough in to cover up the chicken. Put the slow cooker on low and cook for about 8 hours.
About an hour and a half before you’re ready to eat your dinner, add uncooked rice to the slow cooker, also add two cups of water to help cook the rice. Keep an eye on this and add more water if you need to.
Once the rice is cooked, you’re ready to serve and enjoy!
